January 6 to 13


Jan. 6 ~ Last Sunday found us staying home except for a couple hours checking on Momma Kitty - she is so sweet and comes running towards me each time I walk into the house.  I spend any where from 30 minutes to a few hours at Pam & Wayne's home checking on her.  Most of the day I rested on the couch or in the recliner as my costochondritis was really bothering me.

Jan. 7 ~ The highlight of our day was watching the Alabama vs Notre Dame football game.  
I am sure all the yelling I did contributed to Alabama winning the game!!  I don't know a lot 
about football but I can sure cheer them on when they are running for a touchdown.  Ron just laughs at me.And then I tease him when he yells back at the TV during a bad call.
Jan. 8 ~ "National Bubble Bath Day" ~ Our Forever Friends met Tuesday morning.  We were a small group of 5 and had lots of sharing.  The one thought that has stuck with me is spending time with God is like marinating a good steak.  Let me explain ~ If you marinate a steak for about 15 minutes and then cook it it doesn't have much of the marinate flavoring but if you marinate that steak for a few hours or over night when you cook it all the flavors are throughout the meat.  Now how is that similar to spending time with God you may be asking.  If I am only sending up arrow prayers it is not very intimate with the Lord but if I can spend an hour reading God's word, meditating on his word, just sitting in his presence and dwelling on him I walk away with God permeating all through me.  Thanks Linda for the analogy...I have thought about it a lot this week.

Jan. 9 ~ found us up early to get our work done and then off to Springfield for another round of eye appointments.  Randy (the ocularist) did some tweaking and then we were off to kill some time for a few hours while he worked on my eye.  We went to Camping World.  Ron did some pricing for the campground and I picked up a few things for the rig: a new drain cloth and some small expanding bars to put across the cupboard where our crockpot goes while traveling...keeps it from falling out of the cupboard.  Also got a new LED light for the little light in the corner above the recliner...wow!  what a difference it makes in being able to see.  They are a little pricey, $17 each, so we will only be getting one at a time...we need 3 more for in the living room.  We also stopped at Sam's Club and picked up some groceries and a few gifts for later in the year (yes Christmas gifts for 2013!).  Back to see Randy and get my eye fitted.  What a great job he has done ~ don't go back till 4/3/13!!!  We stopped at Lamberts, home of the throwed rolls in Ozark.  Tasty food, great service and so many fun things to see on the walls.
Jan. 10 & 11 ~ found me not feeling too well with a horrible headache and achy ribs/side.  Ron was busy working on cleaning up some of the campground - focusing on the tool shed and surrounding areas.    Friday I had to call Sam's Club because my stamps were nowhere to be found...yep they were still at the store :(  I also started tracking my food intake on myfitnesspal.com - part of my plan to continue getting healthy.  I also stayed the night at Pam & Wayne's Thursday night and got to take my bubble bath!! :) !!  that is one of the things I miss the most about living in our motor home.  Not sure Momma Kitty was happy to have me lounging in the tub for a couple of hours - she kept walking in/out of the bathroom but once I was snuggled on the couch she was a happy kitty as she snuggled with me all night!

Jan. 12 ~ we worked in the morning and then went back to Springfield.  First stop was Target to get a kennel for Linus.  It is one that collapses when not in use.  It worked really well while we were at the RV show and Linus stayed in the Jeep.  Then it was off to Sam's Club to pick up my stamps.  Found out they used this as a learning tool to remind the cashiers to give the stamps to the customer as soon as they ring it up - hope our cashier didn't get into too much trouble because we were chatting instead of paying attention to my order.  And then we were off to the Boat/RV show at Ozark Empire Fairgrounds.  We were quite disappointed as they only had one motor home and that was an used Class C.  We did see a couple of 5th wheels that we wouldn't mind having but that would mean we would have to buy a new truck, sell our motor home and Jeep and we don't think that is going to happen anytime soon.  Stopped off to take care of Momma Kitty on the way home.  Love how she comes running to me and wants to be cuddled and petted.  

Which brings us to today ~ it is super cold outside.  Our water froze last night to tonight we will be leaving the faucet dripping in the tub.  We spent most of the day taking down all the Christmas decorations and cleaning the rig.  It always looks so bare when the decorations are down.  We did put up some LED white lights in our dining/kitchen area.  We like to have some lights on for ambiance in the rig without having all the regular lights on.  I am also trying to try new recipes a couple of times a month as we seem to get in a rut of eating the same stuff over and over.  Tonight was chicken spaghetti.

This is how the recipe was written:

Ingredients
1 lb boneless, skinless chicken breasts
1 lb velveeta cheese, regular or mexican
1 can(s) rotel tomatoes, regular or hot
1 lb spaghetti pasta
1 stk butter

1 can(s) cream of chicken soup, undiluted
1 can(s) cream of mushroom soup, undiluted
1 medium onion, chopped
1 bell pepper, red or green, chopped
salt and pepper to taste
Directions
1. Boil chicken breasts in a large pot adding 1/2 teaspoon of salt and 1/2 teaspoon of black pepper to water.
2. Remove chicken when completely done, about 10 to 12 minutes.
3. Boil spaghetti pasta in remaining broth according to package directions. Drain pasta after done and discard water. Set aside the pasta...Do not rinse.
4. Melt the butter in that same (empty) pot and saute the onion and bell pepper.
5. Add tomatoes, soup, cooked chicken and spaghetti to the sauteed onion mixture, one at a time, and gently mix together.
6. Add cheese and stir together, mixing well. Add salt and pepper to taste.
7. Heat until cheese is melted thoroughly, stirring occasionally to keep from scorching.
8. SERVING SUGGESTIONS: Garnish with freshly grated Paremesan cheese and serve with a salad and hot garlic bread.

This is what I used:

Leftover rotisserie chicken
1/2 c shredded Mexican cheese
1 can garlic diced tomatoes

1 box whole wheat thin spaghetti
1 cube butter
1 can crm of celery soup
1 can crm of mushroom soup
8 oz sliced mushrooms
1 chopped onion
garlic roasted sea salt (from Sam's Club)

Cooked the spaghetti in one pan. While that was cooking I melted the butter, added the mushrooms & onions, chopped up chicken, can of diced tomatoes, both cans of crm soups, 1/2 can milk and the grated cheese...let that simmer till noodles were done. Added the noodles a little at a time and stirring. Once everything was mixed together served in bowls. I add Parmesan cheese on mine, hubby no. Tasted pretty good. Hubby had two bowls and the little bit I couldn't fit into the bowl for the leftovers in the fridge. Leftovers will be Tuesday night's dinner.
 

And I must confess what I did...while cleaning up I accidentally unplugged the DVR with 20 minutes left to go of the Seahawks game.  Got the TV plugged back in and the game was live with 13 seconds to go and the score was 28 Seahawks 27 Falcons...and then the Falcons came back and won the game...you would have thought I caused the world to end when the TV went out.  I had one very mad hubby on my hands.  After he yelled at me and I yelled at him I just sat on the couch and said nothing.  Finally I said to Ron "come on it's just a game it's not like someone died."  He mellowed out but I don't think he will let me forget what I did.  Good thing he loves me!!!

  1. I have used myfitnesspal off and on. I really need to get into the habit of using it ALL THE TIME.

    And I need to take another hint from you - more time reading the Bible and just "being" with God.
